Sister Sadie's Honey Cake

One of the oldest types of cakes in the world is the honey cake. This cake of flour and honey is a staple at the Jewish New Year Rosh Hashanah. It is also known to have been around in ancient Roman times and is called Lebkuchen in Germany. Many of the recipes for this variety of cake include spices and usually some coffee or tea. This southern version of the cake uses flat Coca-Cola. The Jewish community that grew up in cities such as Savannah, Atlanta, and New Orleans have a personal connection to ice cold Coca-Cola according to an American Jewish historian named Marcie Cohen Farris. It is believed that Coca-Cola was more readily available than hot coffee or tea, in the southern states, on their warm afternoons.The recipe used in this book was shared by Sadie Gottleib of the old Gottlieb's Bakery in Savannah.


My Experience

I felt like I was making muffins as I was following this Honey Cake recipe. All of the wet ingredients get blended together and all of the dry ingredients get blended together and then the two are combined. That is all it took; the batter then gets put into a floured loaf pan and voila, it is ready to go in the oven. This cake is very comforting. Cinnamon and allspice are in this particular recipe and it makes the kitchen smell great. When the cake comes out of the oven, it is very satisfying to brush on a sticky layer of honey onto the warm cake and sprinkle the top with toasted almonds. The flavor was nice and it really would work well as a muffin.
