1800 to 1869 Cake #1
Woohoo, I made it into the 1800's! In this century multiple advancements such as bicarbonate of soda, or as we know it baking soda, as well as baking powder, and the gas stove made baking easier and more accessible to the middle class.
Lemon and Molasses Spice Marble Cake
Now that baking took less time, people started to get more creative with their cakes. An increase in German immigrants, which included German bakers, also brought some new techniques over to America. One of these ideas was a marble cake which was first seen in bakeries, but home bakers quickly learned how to mix batters of different colors and flavors to get a neat marbling effect.
This cake has two batters. The first is Molasses batter that is packed with flavor, it includes cinnamon, mace, nutmeg, and cloves, The second batter was a lemon cake lightened up with beaten egg whites.
I really liked this cake! I didn't realize that the combination of all of those spices would actually taste good with lemon. The lighter lemon cake balanced the richer heavier molasses cake. I also really liked the look of it. It looks fancy even though it takes barely any effort to swirl these batters together. The book also includes an optional Lemon Glaze, which to me is not an option, of course I wanted the glaze, YUM!
