Lazy Daisy Cake
The Lazy Daisy cake was written about as early as 1914 in the Chicago Sunday Tribune. A woman named Margaret Hill from Waterloo, Iowa submitted the recipe. This cake is a sheet cake with a broiled topping of coconut, brown sugar, and cream. This quickly became one of America's most beloved cakes due to how easy it is to make, how delicious it is, and because of its playful name. The phrase "lazy daisy" came from a poem that said, "there's something in the lazy daisy atmosphere" to describe the fresh and carefree feel of June.
In the 1920's a company called Snowdrift shortening ran ads sharing the recipe, and newspaper columnists started sharing it more and more. The popularity of the cake grew and during the war in the 1940's people gravitated towards this cake because it was simple and economical.
My Experience:
I have earmarked this page in the cookbook! This cake was so easy to make and everyone loved it.
A review from a neighbor: "I'm not a fan of coconut but man this coconut one is soooooooooo good!!!! You should make that one again."
I wanted to make sure to use the same number of o's and exclamation points as she did to keep it accurate and honest, haha! I have to agree with her, I didn't think that I would like it because I am not a coconut fan, but I think the brown sugar and cream made all the difference. Recipes for this cake can easily be found on the internet with minimal variations. I took a picture of each step and the cake is so easy they don't even need any explanation. I guess that is why it has "Lazy" in the name:)
