Cinnamon Flop
Amish families came from Switzerland and Germany as early as 1727 and settled mostly in eastern Pennsylvania. While the Amish are very simple and live a disciplined life, they bake and enjoy desserts daily. The Cinnamon Flop has no eggs and can be made with simple ingredients from the pantry. *Amish secret to a light cake is that the ingredients must be mixed by hand until just combined.* A printed recipe for this cake was fist seen in the 1916 Club House Cook Book from Reading, Pennsylvania. Another similar recipe was printed in Wisconsin in 1918 but it was called the "economy cake".
My Experience:
This cake is so easy, my 4 year old could probably make it. All the ingredients get mixed by hand and then it is plopped into a pan to bake. This cake is pretty much a coffee cake. It is full of butter and topped with cinnamon sugar. It is hard to go wrong with this one.

" Just had my first bite, this is my fave by far." 10 minutes later..."And I ate the whole thing and didn't share!"
