Frances Virginia Hot Milk Sponge Cake with Lemon Filling

Tearooms were places where women could dine without men and it helped usher in social change. Women were able to enjoy fashion and conversation openly with each other. They also became small business owners because women owned and ran these tearooms. In Atlanta, the Frances Virginia Tea Room was the place to dine. One of the most popular cakes was a sponge cake with lemon filling that was covered in boiled white icing. The cake was named after the tearoom owner, Frances Virginia and was very popular in the 1930's and 40's.

My Experience:

This cake is delicate and pretty with popular flavors. I would say that this one was not executed the best on my end, but still tasted good when all was said and done. My filling was not thick enough and my cake layers were way uneven. The icing was alright but could have been a bit fluffier. I think that the recipe was sound, it was just more baker error. The neighbors loved it so it would be worth a retry.
