Cold Oven Pound Cake
At the turn of the 20th century, gas ovens grew in popularity. In order to save money, people did not light the oven until it was ready to be used. They also believed that you shouldn't put a cake into a hot oven. This pound cake goes into the oven before you turn it on and then the heat gets gradually increased during the baking process. Supposedly, this helps the cake rise evenly and gives it a nice crunchy crust.
My Experience
It felt odd putting a cake in the oven without having it preheated, but it was nice not having to waste any energy by preheating the oven too early. Besides separating the eggs and beating the whites, this cake was very simple. It cooks in the oven for a long time, but if timed right, it is an easy and yummy dessert after a meal.
