Brooklyn Blackout Cake

Ebinger's Bakery was located in Brooklyn in the mid 1900's. The bakery was located right next to the Brooklyn Navy Yard, where battleships and air craft carriers were assembled during WWII. Ebinger's created a legendary cake named for the mandatory blackouts in Brooklyn that were put into effect in order to protect the 71,000 workers at the Naval Yard. Their chocolate cake has three layers filled with custardy pudding, frosted with a chocolate frosting, and covered with chocolate cake crumbs. It was meant to look like a visual blackout. Ebingers closed in1972, but the name of their cake still lives on in many bakeries where they sell super chocolaty cakes and call them "Blackout Cakes".

My Experience

This recipe had 8 steps and each one was a paragraph long. Between the filling, cake, and frosting there were 22 items that had to be set up for the mise en place. It was a lengthy process and the dishes really added up:) Everything seemed to come out well but I only got to taste the filling and the frosting because I made it for a birthday party. I was told by the hostess that the guests really enjoyed it, but I don't think I will be spending the time to make this one again.
