Mary's Cherry Upside-Down Cake

Mary Drabik grew up in Chicago in the 1950's. Her aunt had a cherry tree in her yard, so when it was time to pick them they had to use them. The family would enjoy cherry everything and one of the favorites was this upside down cake. Mary described the endless baking: "Then the cherry craziness would begin. We didn't have a lot of freezer space, so when those cherries came in, we had cherry everything. That was how it used to be. When food came into season, that was what you ate." In 2014 Mary entered her mothers cake in the Minnesota State Fair and won first prize.

My Experience:

Upside down cakes are fun to make because you never know what it looks like until it is flipped over. Warming up the butter and brown sugar smells so good and then placing all of the cherries in the gooey goodness is fun as well. After that, all you have to do is make a simple cake batter, pour it on top and bake it.

The end result was a cool looking cake with a nice texture. I am not a huge cherry fan but this was a quality recipe.
