Ocracoke Fig Cake

Fig preserves are special on the Outer Banks of North Carolina, especially Ocracoke Island.

"This is where figs grow prolifically, where they are a part of the island's history, and where each summer a Fig Bake-Off occurs at the Annual Fig Festival."

The Spanish and Italian explorers brought figs to the area and they thrived due to the salt, sand, wind, and heat of the area. Figs do not ship well, so they are most often used locally or preserved.


My Experience:

It always makes me happy when a cake only needs one mixing bowl and one baking dish. This recipe doesn't even have butter to cream. It has a the classic spices and you just mix in the fig preserves to the batter. It turned out to be a decent cake with a good amount of flavor to it.
