The Hummingbird Cake 1963-1979 Cake #5
In the 1960's, Jamaica Airlines made this cake as a marketing promotion. It is a sweet cake made with pineapple, banana, and cinnamon. It was originally called the Dr Bird cake because that is what they called the hummingbird symbol that was painted on their jets. The tropical flavors were meant to make the eater feel like they were on holiday in the islands.
Eventually, a woman in the south made some adjustments to the cake by adding cream cheese frosting and pecans. The recipe shot to stardom in the south. According to Brandi Stafford, of the Tulsa World, the Hummingbird Cake goes by another name in Oklahoma- "The Cake That Doesn't Last."
My Experience
The Hummingbird Cake is worth the hype. I have ear-marked it and I have made it multiple times. Once you have all of the ingredients ready, it is so simple to just throw them all in the mixer. The end result is so moist and flavorful, everyone really enjoyed it. I had a neighbor order another one because her husband wanted more to snack on, no special occasion or anything. This is a winner!
